This is a lean and meaty cut from the lamb, there's really only one way to cook this awesome cut. You've got to cook them low and slow in some braising liquid to get the meat to fall off the bone, it is so succulent and rich, if you have a smoker you could throw them on to start and then finish with a braising liquid of your choice.
